I’ve heard of a technique something like this before, but can you tell me why it works? That’s really what I’m wondering.

And does this have something to do with the traditional method of ice cream making where you use ice and rock salt?

I am not sure if about the traditional method of ice cream making but when water freezes into ice, it forms crystals where the positive poll (the hydrogen atoms) of one molecule are attracted to the negative poll (oxygen atom) of the next, and so on. The ions from the salt interfere with the interaction between the water molecules making it more difficult for the bonds to form making ice crystals. This has the effect of lowering the melting temperature of the water. I learned this trick from my chemistry and this is the easiest way I can explain it. Chemistry is not my specialist field but I learned it the technique from these two videos part 1 and Part 2.
